FOOD FACTS

Which one of these recipes for Plain Fruit Cake would you find easiest to follow?

1. Mix together 1½ cups self-raising flour, 2 dried eggs, dry, salt and spice to taste. Rub in 3 oz. fat and add ⅓ cup sugar and ½ cup fruit. Mix with milk and water, and bake in a moderate even.

2. All spoons level

Oven , moderate 400°F. Cake tin 7” diameter Time 1 - 1¼ hours.

8 oz. self-raising flour

¼ level teaspoon salt

½ level teaspoon mixed spice

2 level tablespoons dried egg, dry

3 oz. fat

3 oz. sugar

4 oz. dried fruit

4 tablespoons water

About ¼ pint milk

Method

1. Grease the cake tin and prepare the oven.

2. Mix the flour, salt, spice and egg in a basin.

3. Rub in the fat very thoroughly until the mixture looks like fine breadcrumbs.

4. Add the sugar and fruit and mix well.

5. Mix to a dropping consistency with the water and milk.

6. Put in the greased tin, spreading the top flat.

7. Bake in a moderate oven for 1 - 1¼ hours.

8. Leave to cool for two or three minutes and then turn out carefully on to a wire rack.

4 tablespoons water

About ¼ pint milk

Mix the flour, salt, spice and egg. Rub in the fat very thoroughly. Add the sugar and fruit. Mix to a dropping consistency with the water and milk. Turn into a greased 7” tin and bake in a moderate even for 1 - 1¼ hours.
